A theme sets the page surface and the default ink, so your writing and drawing match the board. Change it from the paintbrush menu in the page toolbar; new notebooks also have a default theme.

The ink color follows the theme automatically. For example, new writing on the chalkboard is white chalk, so it's readable on the dark slate. Themes render in print and PDF export too, so a chalkboard page prints looking like a chalkboard.
